Ingredients:

  • 4 boneless, skinless chicken breasts

  • 2 tablespoons olive oil

  • 3 cloves garlic, minced

  • 1 teaspoon paprika

  • 1 teaspoon dried thyme

  • 1 teaspoon dried oregano

  • 1/2 teaspoon salt

  • 1/4 teaspoon black pepper

  • Juice of 1 lemon

  • 1/4 cup chicken broth

Instructions:
1. Preheat the oven to 400°F (200°C) and prepare a baking dish with a small amount of olive oil.
2. In a small mixing bowl, combine the minced garlic, paprika, dried thyme, dried oregano, salt, and black pepper.
3. Pat the chicken breasts dry with a paper towel and drizzle them with olive oil on both sides.
4. Rub the spice mixture evenly onto the chicken breasts, making sure to coat them well.
5. Heat a large skillet over medium-high heat and add the seasoned chicken breasts. Cook for 2-3 minutes on each side until they are nicely browned.
6. Transfer the chicken breasts to the prepared baking dish.
7. In the same skillet, add the lemon juice and chicken broth, scraping any browned bits from the bottom.
8. Let the mixture simmer for a minute or two until slightly reduced. Pour it over the chicken breasts in the baking dish.
9. Cover the baking dish with foil and bake for 15-18 minutes or until the chicken is cooked through and reaches an internal temperature of 165°F (74°C).
10. Remove the chicken from the oven and let it rest for a couple of minutes.
11. Serve the chicken with your choice of side dishes, such as roasted vegetables or a fresh green salad.
