Bolognese, my way!

If you know me you know my heart and soul goes into this dish every time I make it. If I love you….you have probably enjoyed it a time or two. It’s not the traditional recipe, it’s just my way. Here’s how I do it!

Serves 4-6

Ingredients

1 pound ground meatloaf mix (1/3 beef, 1/3 pork, 1/3 veal)

2 tbsp extra virgin olive oil

1 large onion, finely diced

2 large carrots, finely diced

3 stalks of celery, finely diced

4 cloves of garlic, finely minced

6 oz tomato paste

1 tbsp Italian seasoning

1, 28 oz can of whole tomatoes

1, 28 oz can of crushed tomatoes

1 parmesan rind

grated parmesan and crushed red pepper (optional)

Directions

  1. Brown the ground meat in a dutch oven with extra virgin olive oil. Season with salt and pepper. When the meat is 80% cooked add in the finely diced vegetables. Season again with salt and pepper and cook until vegetables are soft and meat is fully cooked.

  2. Add in the tomato paste and stir to combine well. Cook until the tomato past turns a rusty color. Add in Italian seasoning.

  3. Add in both 28oz cans of tomatoes and stir well. Fill 1 can half way with water and swirl it around to get all the remaining tomato product in the can. Poor the contents of that can into the second can and repeat. Then pour water and tomato mixture into the dutch oven.

  4. Taste and season if necessary then add in the parmesan rind. Simmer, covered, for about an hour.

  5. Serve with your favorite pasta. I prefer bucatini or rigatoni. Top with crushed red pepper and more parmesan. Enjoy!
