Corn Chowder

Ingredients

1 yellow onion, diced

3 stalks of celery, diced

3 tablespoons extra-virgin olive oil

2 bags of frozen sweet corn

Salt and pepper to taste

1 tsp Garlic powder

1/2-1 tsp chili powder

32 oz chicken stock

2 cups plain oat milk, or dairy free milk of choice

Directions

  1. In a soup pot, sauté the onions and celery and extra-virgin olive oil for about 5 minutes until translucent. Season with salt, pepper, garlic powder, and chili powder.

  2. Add in one bag of frozen corn and stir to combine with onions, celery, spices, and olive oil.

  3. Add in 32 ounces of chicken stock and simmer for 5 to 10 minutes.

  4. Using an immersion blender or a regular size blender, blend the contents until very, very smooth. Return back to the pot over low medium heat.

  5. Add in the second bag of corn and cook on low medium for 10 to 15 minutes. Taste and season again if necessary.

  6. Add in 2 cups of nondairy milk. Stir to combine, warm through and enjoy!
